This vegan sugar snap pea and carrot soba noodles recipe offers a delightful blend of flavors and textures, featuring tender soba noodles tossed with crisp sugar snap peas and julienned carrots in a savory sesame-ginger sauce. It's a quick and nutritious meal perfect for busy weeknights.
Ingredients: 200g soba noodles. 150g sugar snap peas, trimmed. 2 medium carrots, julienned. 2 tablespoons sesame oil. 2 cloves garlic, minced. 1 tablespoon ginger, grated. 3 tablespoons soy sauce. 1 tablespoon rice vinegar. 1 tablespoon maple syrup. 1 teaspoon sriracha sauce. 2 green onions, thinly sliced. 1 tablespoon sesame seeds, for garnish.
Instructions: Follow the directions on the package to cook soba noodles. Run cold water over the drain and rinse. Put sesame oil in a large pan and heat it over medium-low heat. Add the grated ginger and minced garlic. Cook for about one to two minutes, until the smell is nice. Slice the carrots and add the sugar snap peas to the pan. For three to four minutes, or until the vegetables are soft but still crisp, stir-fry them. Mix soy sauce, rice vinegar, maple syrup, and sriracha sauce in a small bowl with a whisk. Add the sauce to the vegetables in the pan and mix them together. Toss the cooked soba noodles around in the pan to make sure they are covered in sauce all over. Cook for another two to three minutes, or until the noodles are warm all the way through. Take it off the heat and add sesame seeds and sliced green onions before serving.
