These wholesome tofu skewers make a tasty, filling, and low-calorie dinner. They make a tasty and nourishing meal when marinated in a delightful mixture of soy sauce, maple syrup, and spices and then perfectly grilled alongside vibrant vegetables.
Ingredients: 1 block extra firm tofu, pressed and cubed. 1 red bell pepper, cut into chunks. 1 yellow bell pepper, cut into chunks. 1 zucchini, sliced into rounds. 1 red onion, cut into chunks. 2 tablespoons low-sodium soy sauce. 1 tablespoon maple syrup. 1 tablespoon rice vinegar. 1 teaspoon garlic powder. 1 teaspoon ginger powder. Salt and pepper, to taste. Wooden skewers, soaked in water.
Instructions: To make the marinade, combine the soy sauce, maple syrup, rice vinegar, ginger and garlic powders, salt, and pepper in a small bowl. Alternately thread bell peppers, red onion, zucchini, and tofu onto the skewers. After the skewers are in a shallow dish, cover them with the marinade, making sure to coat every piece. Give it at least fifteen minutes to marinate. Set the grill pan or grill to medium-high heat. Give the grill grates a little oil. After putting the skewers on the grill, cook them for 10 to 12 minutes, rotating them now and then, until the vegetables are soft and the tofu has a light char. Enjoy and serve right away!
