This Watercress with Spicy Chile and Sesame Vinaigrette salad is tasty and refreshing. The watercress gives it a peppery crunch, the spicy chile gives it a kick, and the sesame vinaigrette makes it rich and nutty. It goes well as a side dish or a light lunch!
Ingredients: 4 cups fresh watercress, washed and trimmed. 1 red chile pepper, thinly sliced adjust to taste for spiciness. 2 tablespoons toasted sesame seeds. 3 tablespoons rice vinegar. 2 tablespoons soy sauce. 1 tablespoon sesame oil. 1 tablespoon honey. 1 clove garlic, minced. Salt and pepper to taste.
Instructions: Put the sliced red pepper and fresh watercress in a large bowl. While the pan is still hot, add the sesame seeds and toast them until they turn golden brown. Take them off the heat and let them cool down. It's time to make the vinaigrette! In a different bowl, mix the honey, soy sauce, sesame oil, rice vinegar, minced garlic, and salt and pepper to taste. Toast the sesame seeds and then sprinkle them on top of the pepper and watercress. Pour the sesame vinaigrette over the salad and gently toss everything together.
