If you like burgers, these Chipotle Pumpkin Veggie Burgers are a tasty and filling vegetarian option. When you mix pumpkin, black beans, and chipotle pepper, your food gets a tasty smoky and spicy kick.
Ingredients: 1 can 15 oz pumpkin puree. 1 cup black beans, drained and mashed. 1/2 cup breadcrumbs. 1/4 cup red onion, finely chopped. 2 cloves garlic, minced. 1 chipotle pepper in adobo sauce, minced. 1 tsp ground cumin. 1/2 tsp smoked paprika. Salt and pepper to taste. 4 burger buns. Toppings of your choice lettuce, tomato, avocado, cheese, etc..
Instructions: Put the mashed black beans, breadcrumbs, red onion, minced garlic, minced chipotle pepper, ground cumin, smoked paprika, salt, and pepper in a large bowl. Mix everything together well. Take the mixture and shape it into four burger patties. Then, put them on a baking sheet that has been lined with parchment paper. Put it in the fridge for at least 30 minutes to make it firm. Warm up your grill or grill pan on the stove by setting it on medium-high heat. Use cooking spray or oil to grease the grill grates. The pumpkin veggie burgers should be cooked on each side for four to five minutes, or until they get grill marks and are hot all the way through. Put the burger buns on the grill and toast them for one to two minutes, until they get a little brown. Put a pumpkin veggie patty on the bottom half of each bun to make the burgers. Choose what to put on top, then put the top bun on top. You should serve your Chipotle Pumpkin Veggie Burgers hot and enjoy them!
