A spinach frittata is a tasty and healthy choice for breakfast or brunch. It's baked with fluffy eggs and chock full of healthy spinach, bright bell peppers, and smooth cheese.
Ingredients: 6 large eggs. 2 cups fresh spinach, chopped. 1/2 cup diced onion. 1/2 cup diced bell pepper. 1/2 cup shredded cheese your choice. 1/4 cup milk. Salt and pepper to taste. 2 tablespoons olive oil.
Instructions: Start by heating the oven to 350F 175C. Whisk the eggs, milk, salt, and pepper together in a bowl. On medium heat, add olive oil to a skillet that can go in the oven. Saut the bell peppers and onions for two to three minutes, until they get soft. After you add the spinach, cook for two more minutes or until it wilts. Place the egg mixture on top of the vegetables that have been sauted in the pan. Cover the whole thing with shredded cheese. Place the skillet in an oven that has already been heated and bake the frittata for 15 to 20 minutes, or until the top is set and slightly golden. Take it out of the oven and let it cool down for a while. Cut it into wedges and serve.
