Ingredients: 2 cups all-purpose flour. 1/2 teaspoon baking powder. 1/4 teaspoon salt. 3/4 cup unsalted butter, softened. 1 cup granulated sugar. 1 large egg. 1 teaspoon vanilla extract. Food coloring assorted colors. Sprinkles.
Instructions: Mix the flour, baking powder, and salt together in a bowl with a whisk. Melt the butter and mix it with the sugar in another bowl until the mixture is light and fluffy. Add the egg and vanilla extract and mix them in well. Mix the dry ingredients into the wet ingredients one at a time until a dough forms. Depending on how many colors you want to use, cut the dough into equal parts. Each piece of dough should have a few drops of a different food coloring added to it. The dough should be kneaded until the color is spread out evenly. Put each piece of colored dough in its own piece of plastic wrap and put it in the fridge for about 30 minutes to cool down. After the dough has been chilled, cut off a small piece of each color and roll it into a rope of the same length. Put the ropes of different colors next to each other and press them together gently. Carefully stack the ropes on top of each other, switching between the different colors to make a checkerboard pattern. Lightly press the stacked ropes together to keep them together. Carefully roll the dough together to make the sides smooth. Sprinkles should be spread out on a clean surface. Then, roll the dough log over the sprinkles to cover it completely. Put the dough log with the sprinkles back in the fridge for at least an hour, or until it is firm. Warm the oven up to 350F 175C and put parchment paper on a baking sheet. The dough will be firm when you cut it into cookies of the thickness you want. Place the cookies on the baking sheet that has been prepared. After the oven is hot, bake for 10 to 12 minutes, or until the edges are just beginning to turn golden. For a few minutes, let the cookies cool on the baking sheet. Then, move them to a wire rack to cool completely.
