On yesterday’s cake. A seasonal cake as we only get fresh cranberry during tge winter season, here in KB anyway. Our standard cake usually have three layers, but for combo box, we made it into a two-layer due to boxing factor. Hence we are left with thicker layer of cake than usual. This cake is a very creamy cake from the cake up to the frosting. Therefore the use of cranberry is vital to balance the overall taste of the cake because fresh cranberry fruits are very, very sour. So just like many bakes, especially cakes, elements has been constructed according so that each composition blend perfectly in each bite, which means, you need to have all elements together when eating it. If just having the cake, it will be too creamy and muak, hence you need to get a bite also from the cranberry fruits to cut the muakness. So it balances each other. This also includes the decoration use for the cake.
