Enjoy the smooth, tangy taste of lemon ice cream mixed with the sweetness of raspberry ripple. This creamy dessert is great on hot summer days or whenever you want a tasty frozen treat.

Ingredients: 1 1/2 cups heavy cream. 1 cup whole milk. 3/4 cup granulated sugar. 4 large egg yolks. 1/2 cup freshly squeezed lemon juice. Zest of 2 lemons. 1 cup fresh raspberries. 1/4 cup raspberry jam.

Instructions: In a saucepan, heat the heavy cream, whole milk, and sugar over medium heat until the sugar dissolves and the mixture is hot but not boiling. In a separate bowl, whisk the egg yolks until smooth. Slowly pour the hot cream mixture into the egg yolks, whisking constantly to temper the eggs. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon. Remove from heat and stir in the lemon juice and zest. Let cool to room temperature. Once cooled, churn the mixture in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency. Transfer half of the churned ice cream into a freezer-safe container. In a small bowl, mash the raspberries with the raspberry jam to create a ripple mixture. Drop spoonfuls of the ripple mixture over the ice cream in the container, then top with the remaining ice cream. Use a knife to swirl the ripple mixture through the ice cream, creating a marbled effect. Cover and freeze the ice cream cake for at least 4 hours or until firm. Serve scoops of the lemon ice cream cake with raspberry ripple and enjoy!

Lucy's Friendly Foods makes these delicious vegan Raspberry Ripple Muffins that you should try. These soft and moist muffins are full of fruity flavor with a hint of almond. They're great for breakfast or as a sweet snack any time of the day.

Ingredients: 1 cup all-purpose flour. 1/2 cup almond flour. 1/2 cup granulated sugar. 1 tsp baking powder. 1/2 tsp baking soda. 1/4 tsp salt. 1/2 cup almond milk. 1/4 cup vegetable oil. 1 tsp vanilla extract. 1/2 cup raspberry jam.

Instructions: Preheat the oven to 350F 175C. Line a muffin tin with paper liners. In a mixing bowl, whisk together all-purpose flour, almond flour, sugar, baking powder, baking soda, and salt. Add almond milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until just combined. Fill each muffin cup halfway with the batter. Add a small spoonful of raspberry jam to each muffin cup, then top with more batter to cover the jam. Using a toothpick or knife, gently swirl the batter and jam together to create a ripple effect. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Remove from the oven and let cool in the muffin tin for 5 minutes before transferring to a wire rack to cool completely.
