Lord Byron's Kitchen presents a delightful canned stewed tomatoes jam recipe that combines the rich flavors of stewed tomatoes with the sweetness of sugar and a hint of spices. Ingredients: 4 cups canned stewed tomatoes. 4 cups granulated sugar. 1 lemon, zest and juice. 1/2 teaspoon cinnamon. 1/4 teaspoon cloves. 1/4 teaspoon nutmeg.
Instructions: Put the granulated sugar and canned stewed tomatoes into a large pot. After setting the pot over medium heat, stir the sugar until it dissolves completely. To the pot, add the nutmeg, cloves, cinnamon, and lemon zest. After bringing the mixture to a boil, lower the heat, and simmer it for 45 to 60 minutes, or until the jam thickens and reaches the consistency you've desired. To keep from sticking, stir from time to time. Carefully transfer the jam into sterilized jars while it's still hot, making sure to leave a 1/4-inch headspace at the top of each jar. To make sure the jars are properly sealed, cover them with lids and process them in a boiling water bath for ten minutes. After taking the jars out of the water bath, allow them to reach room temperature. Press down on the center of each lid to ensure proper sealing; if the lid doesn't pop back, the jar is sealed. Put the date on the jar labels and keep them somewhere cold and dark. You can use the jam for a year or more.
