Ingredients: 4 boneless, skinless chicken breasts. 1 cup fresh strawberries, hulled and diced. 1/4 cup fresh basil leaves, chopped. 2 tablespoons balsamic vinegar. 1 tablespoon honey. Salt and pepper to taste. Cooking spray or olive oil for grilling.
Instructions: Preheat grill to medium-high heat. Season chicken breasts with salt and pepper. In a small saucepan, combine diced strawberries, chopped basil, balsamic vinegar, and honey. Cook over medium heat until strawberries break down and the sauce thickens, about 5-7 minutes. Remove from heat and set aside. Lightly oil the grill grates or spray with cooking spray to prevent sticking. Grill chicken breasts for 6-8 minutes per side, or until cooked through and juices run clear, basting occasionally with the strawberry basil sauce during the last few minutes of grilling.
