Ingredients: 1 cup fresh strawberries, hulled and chopped. 1 cup canned coconut milk. 1/2 cup pineapple juice. 2 tablespoons honey or agave nectar. 1/4 teaspoon vanilla extract. Pinch of salt. 1/4 cup shredded coconut, toasted optional.
Instructions: In a blender, combine strawberries, coconut milk, pineapple juice, honey or agave nectar, vanilla extract, and salt. Blend until smooth and well combined. Pour the mixture into popsicle molds. If desired, sprinkle toasted shredded coconut into each mold. Insert popsicle sticks and freeze until solid, about 4-6 hours.
