Ingredients: 1 pork loin, butterflied. 1 cup breadcrumbs. 1/2 cup grated Parmesan cheese. 1/4 cup chopped fresh parsley. 3 cloves garlic, minced. 1 teaspoon dried thyme. 1 teaspoon dried rosemary. Salt and pepper to taste. 1/4 cup olive oil. Applewood smoking chips.
Instructions: Start by preheating your smoker to 225F 107C and add some applewood smoking chips. Combine breadcrumbs, salt, pepper, garlic, thyme, rosemary, Parmesan cheese, and parsley in a bowl. Evenly coat the pork loin with the breadcrumb mixture after it has been butterflied. Tightly roll the pork loin and tie with kitchen twine. Season with extra salt and pepper after rubbing olive oil all over the rolled pork loin. The rolled and stuffed pork loin should be placed on the smoker grate. The pork loin should be smoked for two to three hours, or until the internal temperature reaches 145F 63C. Before slicing, give it ten minutes of rest. Cut into pieces and present the succulent smoky-stuffed pork loin!
