Have you ever tried these miniature eggplants? I found them at our local indian store in Daytona Beach. The recipe is like a typical vegetable "subji" that we make. First you cook up the masala or the tarka: ginger, onion, garlic, tomato, #turmeric, fresh cilantro with the stems, salt and pepper. Add green chilies for extra spice [optional]. Cook that for 15 min. Then you add your eggplant and potatoes, cook for an additional 25 min. Add fresh cilantro at the end as a garnish. I like to prep the eggplant ahead and add some indian spices by putting a square cut (split 4 ways without cutting the whole eggplant) into each eggplant and adding a mix of salt, pepper, dried coriander and dried fenugreek. This adds an extra layer of Punjabi flavor as to the eggplants. Serve with #naan or #basmatirice. Are there nutritional benefits to eating eggplant? Yes of course. Eggplant is a very good source of fiber, B1 vitamins, and copper. Also its a great source of manganese, vitamin B6, niacin, potassium, folate, and vitamin K. Finally, eggplant also contains phytonutrients such as nasunin and chlorogenic acid.
