These Chicken Meatball Subs are a delicious twist on the classic meatball sub. Tender chicken meatballs are baked to perfection and then smothered in marinara sauce and melted mozzarella cheese before being served on toasted sub rolls.
Ingredients: 1 lb ground chicken. 1/2 cup breadcrumbs. 1/4 cup grated Parmesan cheese. 1/4 cup chopped fresh parsley. 1 egg. 1/2 teaspoon garlic powder. 1/2 teaspoon onion powder. Salt and pepper to taste. 2 cups marinara sauce. 4 sub rolls. 1 cup shredded mozzarella cheese.
Instructions: Preheat the oven to 375F 190C. In a bowl, combine ground chicken, breadcrumbs, Parmesan cheese, parsley, egg, garlic powder, onion powder, salt, and pepper. Mix until well combined. Form the mixture into small meatballs and place them on a baking sheet lined with parchment paper. Bake the meatballs for 20-25 minutes or until cooked through. While the meatballs are baking, heat the marinara sauce in a saucepan over medium heat. Once the meatballs are done, remove them from the oven and place them in the saucepan with the marinara sauce. Stir to coat the meatballs with the sauce. Slice the sub rolls in half lengthwise and place them on a baking sheet. Spoon the meatballs and sauce onto the bottom halves of the sub rolls. Sprinkle shredded mozzarella cheese on top. Place the baking sheet in the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly. Remove from the oven and top with the other half of the sub rolls. Serve hot.
