I have enjoyed seeing Lillie's character development in the Sun and Moon anime. She does get development in the Gen 7 games (a bit more so in Ultra Sun & Moon, where she actually gets to tag team some battles with you in the postgame), but the anime takes things up a notch. The Pokémon anime has been accused of not giving much character development to anyone but Ash, but they started to fix this in the X & Y series I think, with Serena and Ash seeming to get about equal airtime, with Clemont and Bonnie getting somewhat less, although Bonnie plays a significant role in the whole Zygarde plot of the XYZ arc.
Sun and Moon has done even better with the character development though, with all of Ash's friends getting almost unheard of (for Pokémon anyway) amounts of character development, and even Team Rocket making regular appearances again after being largely sidelined since I think as far back as the Diamond & Pearl series (definitely since Black and White). I think the lack of the gym structure in Alola, meaning Ash wasn't in a rush to get to the League for once, allowed for this level of character development to happen. They also kept Ash largely based at the Pokémon School, with field trips and school breaks serving as ways for him to visit the other islands to complete trials.
Lillie though has by far had the most development. She went from a shy bookworm who couldn't even TOUCH a Pokémon to a capable trainer and member of the Ultra Squad. She got over her fear of touching Pokémon in a reasonable fashion; it seemed she got over it immediately (upon being able to recall the traumatic memory that triggered the fear) at first, but then she had a relapse and couldn't even touch her beloved Shiron/Snowy. However, she has fought through it and has come out stronger.
Now to see her successfully execute the Ice Z-move, with such grace and epicness, is so rewarding. I think she was one of the people announced on Pokénchi as participating in the Alola League, so it will be interesting to see what she does. She does have an Ice Stone so she could evolve Snowy. Her dad also left her a Magearna, so maybe if she can get it to wake up she can use it, especially since no one in the series has the Fairy Z-Crystal yet (Magearna is Steel/Fairy...but Ash already has the Steelium-Z from his battle with Hapu, so Lillie would have to use the Fairy one probably). Magearna in the games has a signature move, Fleur Cannon, which is the third most powerful Fairy-type move in the game -- after Eternal Flower Floette's signature move Light of Ruin and Mimikyu's signature Z-move Let's Snuggle Forever -- with 130 base power and 90% accuracy. If this is true in the anime as well, Lillie is off to a great start.
