When I’m feeling sad, low, frustrated — as I know many people are these chaotic days — I want a potato. Baked russet with crunchy skin. Usually plain, with butter, salt and pepper or olive oil and lemon juice. But this weekend is Sukkot, the festive harvest holiday, when it’s traditional to eat “stuffed” food. So I am thinking about a stuffed baked potato like this one with spinach and goat cheese. You can use feta cheese or any other soft, crumbly cheese (farmer, cottage, pot, etc.). For me, two potato halves are dinner. If you need more, serve with eggs and/or a salad.
