Getting ready for Winter, but I want to avoid all these sugary warm drinks. I love CHAI TEA, but all the premixed brands are loaded in nasty sugars. I adopted the Chai Tea from www.epicurious.com, but Sugar free! YIELD : Serves 6 to 8 INGREDIENTS 🌶️2-inch piece fresh ginger, cut into thin rounds 🌶️2 cinnamon sticks 🌶️2 teaspoons black peppercorns 🌶️10 whole cloves 🌶️6 cardamom pods 🌶️6 cups cold water 🌶️4 to 6 bags of Rooibos tea 🌶️2 cups whole milk 🌶️1/2 teaspoon of stevia powder PREPARATION Excluding the Cinnamon sticks, crush the fresh spices (I used my mortar & pestle). Along with 6 cups of water, add ALL fresh ingredients in medium saucepan (excl stevia & milk). Bring to boil over high heat. Reduce heat to medium-low, partially cover pan, and simmer gently 10 minutes. Remove from heat. Add tea bags and steam 5 minutes. Discard tea bags. Add stevia and make sure it tastes to your preference. It is basically done now. Fill your cup 1/3 to half with the chai tea, add your preferred milk.
