Two Meals with Somen Noodles

Following on from my last post, here's a reinvention of the last of the salted salmon and pumpkin. Even switching it over to a soup like this was refreshing, and I was able to use the pumpkin broth to make up a noodle soup base. I changed up the pickles too. The second dish was a more dramatic switch. I now had the somen noodles open and as it happened, had been craving sukiyaki - a hot pot dish with a sweet soy soup. The meat continues to cook as you eat, and I don't like overdone beef, so I tend to serve it quite pink and let it finish up as I work through the veggies. Somen noodles are 100% not traditional, but it worked and it was pretty tasty. Hot pot is such a great 'use it up' dish because you can really throw just about anything in there and it'll turn out good.
