Pink Borscht mood-board
I just made my 2nd ever Borscht yesterday: 2cups cabbage, 1.5 carrot, 1 beet (reduced from 4 & still so sweet), 1/4 onion, handful of dill, 4 garlic cloves, 4 cups water, splash of vegg oil, 1 tsp chicken stock (instead of salt), 2 Tbsp sour cream (b4 serving)—despite forgetting to add the bay leaf & the 2 Tbsp lemon juice (couldn't find our juicer), it tastes like Borscht after it had a few hours to blend flavours.. still I don't know what to do, the beets are insanely sweet here, I did not get the signature maroon colour. It was kind of reddish-orangey colour, and it didn't look appetizing bc I did a bad job of blending the soup. I also had to throw in a bunch of extra salt to offset the sugary sickly sweetness of the beets, I dunno maybe an extra 1/2tsp? The Borscht I've liked always were pureed, so I blended everything in my food processor before boiling it in a pressure cooker for 20 minutes & letting it stew in its own steam for 2.5 hrs? I dunno I want to up the colour & smoothness of my puree, which I have a plan for, but the sugar content of the beets is crazy: Should I soak it in water to leech out the sugar? Sour cream to finish. gif1/2
P.S. I ended up having to keep ladling in salt by the pinch full to offset the sweetness of the one freaking beet; which I had assumed would be from a prior handling beets. But after looking at the following videos, I might have to try keeping it whole while it roasts in the oven for 20min then either shred into broth or soak to leech out sugar & add food colouring?
