Ingredients: 1 cup cooked quinoa. 1 cup cooked bulgur wheat. 1 cup cherry tomatoes, halved. 1 cup cucumber, diced. 1 cup bell peppers, thinly sliced. 1 cup shredded carrots. 1 cup canned chickpeas, drained and rinsed. 1/4 cup fresh parsley, chopped. 1/4 cup fresh mint, chopped. 1/4 cup olive oil. 2 tablespoons lemon juice. Salt and pepper to taste.
Instructions: In a large bowl, combine cooked quinoa and bulgur wheat. Add cherry tomatoes, cucumber, bell peppers, shredded carrots, chickpeas, parsley, and mint to the bowl. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour the dressing over the grain and vegetable mixture, and toss to combine. Divide the mixture into serving bowls and serve immediately, or refrigerate for later.
