Ingredients
For the Cauliflower:
1 large head of cauliflower, cut into bite-sized florets
1 cup (120g) all-purpose flour (or gluten-free 1:1 flour)
1 cup (240ml) plant-based milk (unsweetened, unflavored)
2 tsp garlic powder
1 tsp onion powder
1 tsp paprika
½ tsp salt
¼ tsp black pepper
For the Buffalo Sauce:
¾ cup (180ml) Frank's RedHot Original Cayenne Pepper Sauce (it's vegan!)
2 tbsp vegan butter, melted
1 tbsp maple syrup or agave (to balance heat)
½ tsp garlic powder
For Serving:
Vegan ranch or blue cheese dressing
Carrot and celery sticks
Fresh chopped parsley (optional)
How to Prepare
1. Preheat and Prep: Preheat your oven to 450°F (230°C). Line a large baking sheet with parchment paper and spray it lightly with non-stick spray.
2. Make the Batter: In a large bowl, whisk together the flour, plant-based milk, garlic powder, onion powder, paprika, salt, and pepper until a smooth, thick batter forms. It should be similar to a pancake batter.
3. Coat the Cauliflower: Add the cauliflower florets to the batter. Use a spatula to gently toss until every piece is thoroughly coated.
4. Bake Until Crispy: Arrange the coated cauliflower in a single layer on the prepared baking sheet. Make sure the pieces aren't touching for maximum crispiness. Bake for 20-25 minutes, flipping the florets halfway through, until golden brown and crispy.
5. Make the Sauce: While the cauliflower bakes, whisk together the hot sauce, melted vegan butter, maple syrup, and garlic powder in a large bowl.
6. Toss in Sauce: Once the cauliflower is done baking, let it cool for a minute or two to help it stay crispy. Then, gently toss the hot baked cauliflower in the buffalo sauce mixture until evenly coated.
7. Optional Second Bake (for extra crispiness): For an even crispier, "wing"-like texture, return the sauced cauliflower to the baking sheet and bake for another 5-10 minutes.
8. Serve Immediately: Serve your buffalo cauliflower wings immediately with vegan ranch or blue cheese dressing and fresh carrot and celery sticks on the side.
