Thanks to you, I really want to play Mass Effect. I have the second game, but should I go find the first game and play it in order?

Yes! When I first played the series, I started with 2 and it was good but you do get so much more background if you start with 1. 1 can be a grind though because of how old it is, so don’t get bogged down trying to complete every single dumb pointless side mission. Definitely look up the names of missions you absolutely should complete and ignore the rest. 2 and 3 you complete every mission including side missions and they’re all wonderful :)

I think it partially depends on who your Kell is, because say if it's Jack, Reaper is more of a foil to him, but if it's Tracer, Widow is more her foil, and Holland is definitely Kell's foil, so I think go by the relationship rather than person

It’s Hanzo and therein lies the problem. Anyone I consider to be a foil is already another character in the story, or just don’t fit with Holland. So, it’s boiled down to those two and which would be more interesting given the role and characters involved.
