Indulge in the luxurious combination of rich, creamy chocolate truffles paired with the velvety sweetness of port wine. This decadent pairing is perfect for rounding off a special meal or enjoying as an elegant treat on its own.
Ingredients: 200g dark chocolate. 100ml heavy cream. 2 tbsp unsalted butter. Cocoa powder for dusting. 1 bottle of port wine.
Instructions: Finely chop the dark chocolate and put it in a bowl that can handle heat. Put the heavy cream and butter in a small saucepan and heat it over medium-low heat until it begins to simmer. Take it off the heat right away. Add the hot cream to the chocolate chips and then pour it on top. Let it sit for one to two minutes, and then stir it until the chocolate is smooth and all melted. Put a lid on the bowl and put it in the fridge for at least two hours, or until the mixture is firm. Once the chocolate mixture is cool, use a spoon or a small scoop to roll it into little balls. Spread the cocoa powder out on each ball by rolling it in it. Keep the truffles in the fridge until you're ready to serve them on a tray lined with parchment paper. Put the chocolate truffles in glasses and pour the port wine into them.

Ingredients: 1 1/2 cups all-purpose flour. 1 1/2 tsp baking powder. 1/4 tsp salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 1 tsp vanilla extract. 1/2 cup whole milk. 8 oz cream cheese, softened. 1/4 cup unsalted butter, softened. 2 cups powdered sugar. 1 tsp vanilla extract. 1 1/2 cups fresh berries strawberries, blueberries, raspberries. Additional powdered sugar for dusting optional.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with cupcake liners. In a mixing bowl, whisk together the flour, baking powder, and salt. Set aside. In another bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract. Gradually add the dry ingredients to the wet mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined. Spoon the cupcake batter evenly into the prepared muffin tin, filling each cup about 2/3 full. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Let the cupcakes cool in the muffin tin for a few minutes, then transfer them to a wire rack to cool completely. In a separate bowl, prepare the cream cheese frosting by beating the softened cream cheese and butter until creamy. Gradually add the powdered sugar and vanilla extract, continuing to beat until smooth and fluffy. Once the cupcakes are completely cooled, spread a generous amount of cream cheese frosting on top of each cupcake. Top each cupcake with fresh berries of your choice. You can mix and match for a colorful presentation. If desired, dust the cupcakes with a bit of powdered sugar for an extra touch of sweetness.
