Ingredients: 2 ripe bananas, mashed. 1/4 cup almond butter. 1/4 cup maple syrup or honey for non-vegan. 1/4 cup unsweetened applesauce. 1 teaspoon vanilla extract. 2 cups almond flour. 1/2 cup coconut flour. 1 teaspoon baking soda. 1/2 teaspoon baking powder. 1/2 teaspoon cinnamon. 1/4 teaspoon salt. 1/2 cup blueberries or chocolate chips optional. Chopped nuts for topping optional.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with paper liners. In a mixing bowl, combine the mashed bananas, almond butter, maple syrup or honey, applesauce, and vanilla extract. Mix until well combined. In another bowl, whisk together almond flour, coconut flour, baking soda, baking powder, cinnamon, and salt. Gradually add the dry ingredients to the wet ingredients, stirring until a smooth batter forms. If desired, fold in blueberries or chocolate chips. Spoon the batter into the muffin cups, filling each about 3/4 full. Top with chopped nuts if you like. Bake for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean. Remove the muffins from the oven and allow them to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
