Taco Soup is a hearty and tasty soup that's great for a cold night. An easy-to-make dish that's full of comforting ground beef, beans, corn, and Tex-Mex spices. Add your favorite things on top, and then eat it!
Ingredients: 1 lb ground beef. 1 onion, chopped. 1 bell pepper, chopped. 1 can 15 oz black beans, drained and rinsed. 1 can 15 oz kidney beans, drained and rinsed. 1 can 15 oz corn, undrained. 1 can 15 oz diced tomatoes. 1 packet taco seasoning mix. 1 packet ranch dressing mix. 4 cups chicken broth. Toppings: shredded cheese, sour cream, sliced green onions, tortilla chips.
Instructions: In a large pot, brown the ground beef over medium heat, breaking it into crumbles. Drain excess fat. Add chopped onion and bell pepper to the pot and saut until they begin to soften. Stir in the taco seasoning mix and ranch dressing mix. Add the drained black beans, kidney beans, corn, diced tomatoes with their juice, and chicken broth. Stir well. Simmer the soup on low heat for 20-30 minutes, allowing the flavors to meld. Serve hot, garnished with shredded cheese, sour cream, sliced green onions, and crushed tortilla chips. Ingredients: 1 lb ground beef. 1 onion, diced. 1 bell pepper, diced. 2 cloves garlic, minced. 1 can 15 oz black beans, drained and rinsed. 1 can 15 oz kidney beans, drained and rinsed. 1 can 15 oz corn kernels, drained. 1 can 15 oz diced tomatoes. 1 can 4 oz diced green chilies. 1 packet taco seasoning. 4 cups beef broth. Salt and pepper to taste. 1 cup shredded cheddar cheese for garnish. 1/2 cup chopped fresh cilantro for garnish. Tortilla chips for serving.
Instructions: Boil the water in the pressure cooker and add the ground beef. Cook until it turns brown. Break up the onions, bell peppers, and garlic into small pieces. Cook the vegetables in oil until they are soft. Add corn, diced tomatoes, diced green chilies, black beans, kidney beans, and taco seasoning. Mix everything together. Add the beef broth and season with pepper and salt. Use a stir to mix. Turn on high pressure for 10 minutes and then close the lid. When the food is done cooking, carefully open the lid and let the pressure out. It should be served hot with tortilla chips and shredded cheddar cheese and chopped cilantro on top.
