Emilia's horse, in KOTF, is named Tanzie, which is short for Tanzanite, a precious gem, a thousand times rarer than diamonds, that ranges in colour from blue to purple. However, 'Tanzie' on it's own, also has another meaning.
Tanzie is an alternative spelling for Tansy, which is derived from 'Athanasia', which is the greek word for immortality. The name 'Tanzie' means, as you might have guessed, 'eternal life' and sometimes 'flower', as Tansy is also the name of a little yellow flower that appears in Greek mythology.
Zeuse kidnapped a Trojan Prince named Ganymedes by sending/turning into a giant eagle to kidnap him to Mount Olympus and offered to make him the cupbearer of the Gods, so that he could pour their Nectar, and possibly be Zeus's lover too, surprising nobody. He then used Tansy to make a drink that would make Ganymedes immortal. (Side note, Ganymedes is not only associated with the constellation Aquarius, and actually means cup bearer, but is also the name of Jupiter's, the Roman epithet of Zeus, largest moons).
Over the years, the main use of Tansy has been due to how toxic it is. It produces Thujone, a type of elemental structure in organic chemistry (the scientific name is ketone), which is a type of pesticide. What I find interesting, however, is that not only can Thujone kill pests, but it can cause hallucinations, and even be lethal. Though, there are other plants that produce Thujone, but in varying amounts, some, Tansy included, were used both as insect repellent, and medicinally.
Her horse also has a moon shaped mark on it's forehead. The full symbol is the waxing moon, the full moon, and the waning moon. The waning moon, where the shadows are on the right, represent the crone, who we know as Celestia, or rather, Emilia and Vittoria's mother.
To sum it up, Emilia has a lilac horse with a crescent moon on her forehead, named after a precious gem, with the shortened version of her name being that of a herb often used in medicine, and in gardens, that's also considered toxic. Who do we know that associated with the colour purple (or lilac), and enjoys tinkering with toxins and poisons, with an affinity for death?

If Vittoria has/gets a horse, be it to ride, or to pull a carriage or whatever, I bet that it'll be pink, probably with a crescent moon shaped mark somewhere, and have a name linked to fury, fire, that probably relates to cooking in some capacity. Maybe after some kind of herb that's commonly cooked with?
