Ingredients: 1 cup cake flour. 1 1/2 cups granulated sugar. 12 large egg whites, room temperature. 1 1/2 teaspoons cream of tartar. 1/4 teaspoon salt. 1 teaspoon vanilla extract. 1/2 teaspoon almond extract. 1/4 cup cold water.
Instructions: Preheat your oven to 325F 163C and line a cupcake pan with paper liners. In a bowl, sift together the cake flour and 3/4 cup of granulated sugar. Set aside. In a separate bowl, beat the egg whites with an electric mixer until they become frothy. Add the cream of tartar and salt to the egg whites and continue beating until soft peaks form. Gradually add the remaining 3/4 cup of sugar while continuing to beat the egg whites until stiff peaks form. This should take about 5-7 minutes. Gently fold in the vanilla extract, almond extract, and cold water into the egg white mixture. Carefully fold the sifted flour and sugar mixture into the egg white mixture in three additions, ensuring it's well combined but being gentle to maintain the airiness of the batter. Spoon the batter into the prepared cupcake liners, filling each about 3/4 full. Bake in the preheated oven for 20-25 minutes or until the cupcakes are lightly golden and a toothpick inserted into the center comes out clean. Remove the cupcakes from the oven and allow them to cool in the pan for a few minutes before transferring them to a wire rack to cool completely. Once cooled, you can frost or decorate the cupcakes as desired.
