A delicious and comforting curry made with potatoes, eggs, and fresh coriander leaves, infused with aromatic spices.
Ingredients: 4 medium potatoes, peeled and diced. 4 eggs. 1 bunch fresh coriander leaves, chopped. 2 onions, finely chopped. 4 cloves garlic, minced. 1-inch ginger, minced. 2 tomatoes, chopped. 2 green chilies, chopped. 1 teaspoon cumin seeds. 1 teaspoon turmeric powder. 1 teaspoon coriander powder. 1 teaspoon garam masala. 1/2 teaspoon red chili powder. Salt to taste. 2 tablespoons oil.
Instructions: Peel the eggs, then cut each one in half. Set aside. Set a pan on medium heat and add oil. Put in the cumin seeds and let them pop. Put in the chopped onions and cook them until they turn golden brown. Cut up some garlic, ginger, and green chilies and add them. Put it on for two minutes. Put in the chopped tomatoes and cook them until they get really soft. Now put in the salt, coriander powder, red chili powder, turmeric powder, and chili powder. Combine well. Put in the diced potatoes and cook for 5 to 7 minutes, until they get a little soft. Add enough water to cover the potatoes. Put the lid on and cook until the potatoes are done. Add the boiled eggs and chopped coriander leaves after the potatoes are done cooking. Mix slowly. Put garam masala on top of the curry. For another two to three minutes, cook. Change the seasonings to suit your taste. Add more fresh coriander leaves as a garnish. Warm it up and serve it with bread or rice.
