This Spicy Tenderstem and Peanut Noodle Stir Fry is a delicious vegan dish that's packed with flavor and texture. Tenderstem broccoli, tofu, and colorful bell peppers are stir-fried in a spicy peanut sauce and served over rice noodles for a satisfying and nutritious meal. It's a perfect balance of sweet, spicy, and savory flavors.

Ingredients: 200g tenderstem broccoli, trimmed and halved. 200g rice noodles. 2 tablespoons peanut oil. 1 red bell pepper, thinly sliced. 1 yellow bell pepper, thinly sliced. 1 small red onion, thinly sliced. 3 cloves garlic, minced. 1 thumb-sized piece of ginger, grated. 150g firm tofu, cubed. 1/4 cup unsalted peanuts, chopped. 2 tablespoons soy sauce. 1 tablespoon sriracha sauce. 1 tablespoon rice vinegar. 1 tablespoon maple syrup. 1/2 teaspoon red pepper flakes adjust to taste. Salt and pepper to taste. Fresh cilantro leaves for garnish.

Instructions: Following the directions on the package, cook the rice noodles, then drain and set them aside. To make the sauce, combine the soy sauce, red pepper flakes, rice vinegar, sriracha sauce, and maple syrup in a small bowl. In a big wok or frying pan, heat up one tablespoon of peanut oil on high heat. When the tofu cubes turn golden brown on all sides, add them and stir-fry. Take out the tofu and place it aside. Add the last tablespoon of peanut oil to the same pan. Add the grated ginger and minced garlic, and saut for 30 seconds or so, or until fragrant. Add red onion, yellow and red bell peppers, and slices to the pan. Stir-fry the vegetables for three to four minutes, or until they are crisp-tender. When the broccoli is bright green and just slightly tender, add the chopped and halved tenderstem broccoli to the pan and stir-fry for a further two to three minutes. Place the cooked tofu back in the pan and cover the vegetables and tofu with the sauce. After mixing everything together, cook for an additional two minutes. When the rice noodles are done, add them to the pan and toss them with the veggies and sauce. Cook for a further two to three minutes, or until thoroughly heated. To taste, add salt and pepper for seasoning. Present the Stirred Peanut Noodles and Spicy Tenderstem. Add chopped peanuts and fresh cilantro leaves as garnishes and fry in bowls. Savor your stir-fried vegan food!
