Teurgoule
A family favourite of the French, teurgoule is a slow-cooked rice pudding that has roots in Normandy. Milk, rice, sugar and cinnamon (the key ingredient!) are added into a heavy dish and cooked for up to 9 hours, with the heat gradually being adjusted until it slowly cooks at just 50°C. This gives it the delicate caramelisation seen below...

The name teurgoule is Norman itself, meaning 'twist face' - seemingly a strange choice for a pudding, but alluding to the face Norman pirates arriving home would make upon tasting the newfound spice from Spanish ships - cinnamon! The dish was created by sweetening the spice with honey and cooking into a rice pudding, either in a cooling oven or over a dwindling fire during the night. (Recipe and brief history here)

The teurgoule is enjoyed at village festivals and in family homes, a modest dessert of Normandy. However, a small pocket of this community take the teurgoule very seriously. A teurgoule brotherhood (yep, a bona fide brotherhood), based in Houlgate and complete with green and orange ceremonial robes, hold a national contest annually to choose the best professional, apprentice and amateur attempts at creating this traditional dessert (article here). It's almost too ridiculous to be true, so I've added photographic evidence... If you're keen on giving this teurgoule a crack, you're in luck because the competition is open to any entrants! Maybe the 36th year of this contest will be yours.

You'd be hard pressed to find this modest French dessert on a restaurant menu or in a cafe window in Melbourne. Rather, you should make friends with your lovely French neighbours, colleagues or classmates and try a homemade teurgoule concoction.

Allez, un petit dessert pour bien digérer tout ça.
La Teurgoule
2 litre de lait
25 morceaux de sucre
150 g de riz
2 cuillères à café de cannelle
1 pincée de sel
Faire chauffer le lait jusqu'à ébullition, puis ajouter les sucres, la cannelle, la pincée de sel et le riz.
Verser le tout dans un grand récipient en terre en ajoutant une noix de beurre.
Faire cuire la teurgoule à four doux pendant 5 heures.
NDLR : La teurgoule est un plat hautement sacré en Normandie, alors ne vous moquez pas, sinon, vous aurez à faire à la confrérie de la teurgoule !
