Tex-Mex dish Southwestern Frito Pie is hearty and full of flavor. It has layers of seasoned ground beef, chili beans, corn, and cheese, and it's baked to perfection with crunchy Fritos corn chips on top. This is a delicious comfort food that's great for any event.
Ingredients: 1 lb ground beef. 1 onion, chopped. 1 bell pepper, chopped. 1 can 15 oz chili beans. 1 can 10 oz diced tomatoes with green chilies. 1 cup corn kernels. 1 cup shredded cheddar cheese. 2 cups Fritos corn chips. 1 tbsp chili powder. 1 tsp cumin. Salt and pepper to taste. Sour cream and sliced green onions for garnish.
Instructions: Warm the oven up to 175F 350C. Cook the ground beef in a pan over medium-low heat until it turns brown. Get rid of extra fat. Chop up the onion and bell pepper and add them to the pan. Make sure the vegetables are soft. The corn, chili powder, cumin, salt, and pepper should all be mixed in. Let it cook for 5 to 10 minutes. Put half of the Fritos chips in a 9x13-inch baking dish. Add half of the beef mixture and half of the cheese shreds on top. Add more layers with the rest of the Fritos, beef mixture, and cheese. Put it in an oven that's already hot and bake for 20 to 25 minutes, or until the cheese melts and bubbles. Before serving, top with sour cream and sliced green onions.
