Cheesy Fiesta Beef Casserole is a tasty Tex-Mex dish made with seasoned ground beef, black beans, corn, tomatoes, and melted cheese that is baked until it's golden brown. The crunchy tortilla chips on top make it a tasty and comforting meal that the whole family will love.
Ingredients: 1 lb ground beef. 1 onion, chopped. 1 bell pepper, chopped. 1 can 15 oz black beans, drained and rinsed. 1 can 15 oz corn kernels, drained. 1 can 10 oz diced tomatoes with green chilies, undrained. 1 packet taco seasoning mix. 1 cup shredded cheddar cheese. 1 cup shredded Monterey Jack cheese. 1 cup crushed tortilla chips.
Instructions: Before you start cooking, heat the oven to 375F 190C. Put ground beef, onion, and bell pepper in a large skillet. Cook over medium-low heat until the beef is browned and the vegetables are soft. Get rid of extra fat. Don't forget to mix in the taco seasoning mix and black beans. Stir every now and then for 5 minutes. Put the beef mixture into a 9x13-inch baking dish that has been greased. Shred cheddar cheese, Monterey Jack cheese, and crushed tortilla chips on top. Put it in an oven that is already hot and bake for 20 to 25 minutes, or until the cheese melts and bubbles. If you want, you can serve it hot with chopped cilantro or sliced green onions on top.
