A new addition to the Things I Can (Carefully) Eat Department: coconut yogurt!
I hadn't actually tried any before, but this is tasty enough that I might try to make more of a plain version myself! Using decent quality canned coconut milk and a little of the commercial stuff for starter. A good excuse to try using the yogurt setting on the Instant Pot as an incubator.
That should work out significantly cheaper than the commercial stuff, besides always being an oddly satisfying project!
(I can also swallow some plain dairy yogurt without any chunks of fruit or anything, along with probably other non-dairy types. May try making more cow and soy versions too. But, the coconut looked particularly good enough to try this time, for a little variety in the mostly liquid diet of late!)
I was a little surprised to see that this vanilla flavor was unsweetened, but that's easy enough to adjust to your liking. Which was likely the idea there. It had just enough tartness that I decided to add a little honey tonight, and that was delicious. May try some maple syrup in more tomorrow! Sounds like a great flavor combo, too. I may also try including some in a protein shake.
This particular stuff includes like five different strains of lactobacteria, which I could probably use after more antibiotics recently! (For another UTI. Which I'm not sure was completely knocked out. 😑)
May also try to rehab the sadly neglected kefir grains still lurking in the fridge--mostly to have more yummy stuff to drink, but with the added benefit of its being absolutely jumping with friendly bacteria. I was impressed before at how long they stayed viable before, but we'll see. Worst case, I may need to get hold of some more. Pretty sure Mr. C cleared my backup grains out of the freezer, not knowing what they were.
