real talk, this looks super delicious AND I miraculously have a ton of italian sausage on hand - recipe, please?
Thanks! It turned out pretty well, I thought.
1 lb Italian sausage
4 slices of bacon, cut into pieces
1 medium-sized red chile pepper, chopped (can sub cayenne or red pepper flakes for this if you don’t have a pepper on hand)
1 large onion, diced
5-6 cloves garlic, minced
5 13.75-oz cans chicken broth, OR 9 cups water + 9 cubes chicken bouillon
3 lbs or so of red potatoes, sliced
1 cup heavy cream
Fresh spinach, kale, or a mix of both
Salt and pepper
Cook the sausage and pepper in a skillet over medium-high heat until brown and crumbly (10-15 minutes). Take them out of the pan using a slotted spoon (so the drippings stay in the pan) and set them aside.
Cook the bacon in the same pan over medium heat until crisp (about 10 minutes). Stir in the onion and garlic and cook about 5 minutes, until the onions are soft and translucent.
Put the onion mixture into a pot and add the broth OR water and bouillon cubes. Add some salt and pepper. Bring to a boil over high heat. Add the potatoes and boil until tender (about 20 minutes). Reduce the heat to medium and stir in the cream and sausage. Keep cooking that for a few more minutes until everything is hot. Throw in as much spinach and/or kale as you like, cook for another minute or so, and you’re done!
