does this have anything to do with wind-up pain, and why peri-operative and pre-op meds are important? Also, if gas anesthesia doesn’t provide pain control, then what does it do?

Gas anesthesia keeps the animal in a plane of unconsciousness. It is something that we can adjust fairly quickly and in increments, which is useful during surgery. Pre-op and peri-op pain meds are what provide our pain control, and can also reduce how much of the gas we need to give. It doesn't really relate to wind-up pain, it's just not meant to be a form of pain control. It controls anesthetic depth, not pain.
