SELEUSS Chocolates - 45%+ L'Odalisque Brune

Our new Dark Milk Chocolate is named after the famous Rococo painting by Francois Boucher, The Brown Odalisque or L'Odalisque Brune, 1745, Oil on canvas, 53x64cm, located at Musee du Louvre in Paris. 

The Odalisque Brune (TM) is developed using our proprietary SELEUSS MAILLARD REACTION REACTOR (SMR2), enhancing the reactions between the milk amino acids and reducing sugars gently over a period of 6 days, creating distinctive flavors and aromas in the chocolate.  This is the same process used to make our Blonde chocolate (L'Odalisque Blonde).

The Brune series is less sweet compared to the typical Milk Chocolate, which is typically 30%-36% and 38%-41% on the higher end. Series or Block-1 is at 45.51%, with a Cacao Mass of 13.14%, Cacao Butter of 32.37%, Milk of 13.69, and Cane Sugar at 40.80%. Enjoy this bar by itself or with some café latte!

The some what controversial painting of Boucher's wife, Madame Boucher in a particular pose was one of Boucher's favorite themes. It occurs repeatedly in his works, such as in the L'Odalisque Blonde, and art historians have not come up with any particularly persuasive reason for it. Obviously it a picture of a beautiful young nude girl, but why she would willingly put herself into such an odd posture just to show off her naked rear-end is unclear. Nevertheless, it becomes one of Boucher's lasting contributions to art, and the 19th century is full of Odalisques, few of them with such modesty.

The Colombina™ satin SERIES: with a total cacao content of between 55%-65%, it is designed to give you the taste of a dark milk chocolate, but without the dairy!  With almost equal parts high quality cacao butter to cane sugar ratio, these chocolates have the consistencies of a truffle bar, they melt smooth and clean, with balanced taste profiles between fruity CACAO and roasted notes!   ENJOY :)

Batch 818 is at 62% and is topped with Cacao Nib. The earthy chocolate notes of the cacao nibs is contrasted by the smooth semi-sweet chocolate that melts in your mouth!
