These tasty Tiramisu cupcakes let you enjoy the rich, coffee-infused flavors of Tiramisu. They're great for people who like both coffee and dessert. These cupcakes are a great treat for any event thanks to the smooth mascarpone frosting and cocoa powder sprinkles.
Ingredients: 1 cup all-purpose flour. 1/2 cup granulated sugar. 1/4 cup unsalted butter, softened. 1/4 cup whole milk. 1/4 cup strong brewed espresso, cooled. 2 large eggs. 1 1/2 teaspoons baking powder. 1/2 teaspoon vanilla extract. 1/4 teaspoon salt. 1/4 cup mascarpone cheese. 1/4 cup heavy cream. 2 tablespoons powdered sugar. 1/2 teaspoon cocoa powder for dusting. 1/4 cup coffee liqueur optional.
Instructions: Preheat your oven to 350F 175C and line a cupcake pan with paper liners. In a mixing bowl, combine the softened butter and granulated sugar. Beat until creamy and smooth. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet mixture, alternating with the milk and brewed espresso. Begin and end with the dry ingredients. Divide the cupcake batter evenly among the lined cups, filling each about two-thirds full. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean. Let the cupcakes cool in the pan for a few minutes, then transfer them to a wire rack to cool completely. While the cupcakes cool, prepare the Tiramisu frosting. In a mixing bowl, whip the mascarpone cheese until smooth. In a separate bowl, whip the heavy cream and powdered sugar until stiff peaks form. Gently fold the whipped cream into the mascarpone cheese until well combined. If desired, add coffee liqueur to the frosting for an extra Tiramisu flavor kick. Once the cupcakes have cooled, pipe or spread the Tiramisu frosting on top of each cupcake. Dust the frosted cupcakes with cocoa powder using a fine-mesh sieve or sifter.
