Ingredients: 1 1/2 cups heavy cream. 1/2 cup powdered sugar. 8 oz mascarpone cheese. 1 tsp vanilla extract. 1/2 cup brewed espresso, cooled. 2 tbsp coffee liqueur optional. 1 cup crushed ladyfinger cookies. 1/2 cup chopped pistachios. 2 tbsp unsweetened cocoa powder.
Instructions: Heavy cream and powdered sugar should be whipped together in a large bowl until stiff peaks form. Mascarpone cheese and vanilla extract should be mixed together in a different bowl until they are smooth. Mix the mascarpone and whipped cream together by folding them in slowly. Put brewed espresso and coffee liqueur in a shallow dish. Make sure that each ladyfinger is covered in the espresso mixture but not soggy. Crushed ladyfingers should be layered in serving glasses, then a portion of the mascarpone mixture, and finally a sprinkle of chopped pistachios. Put more layers on top of each other until the glass is full, and finish with a dollop of the mascarpone mixture. The parfaits should be put in the fridge for at least two hours so that the flavors can mix. Before serving, sprinkle the tops with unsweetened cocoa powder and add more chopped pistachios as a garnish. Enjoy! Serve cold.
