A delightful sandwich featuring crispy fried red tomatoes, gooey melted mozzarella, peppery arugula, and zesty Dijon mustard, all nestled between toasted bread slices.
Ingredients: 4 slices of bread. 2 large red tomatoes, sliced. 1 cup all-purpose flour. 2 eggs. 1 cup breadcrumbs. Salt and pepper to taste. 4 slices mozzarella cheese. 1/4 cup mayonnaise. 2 tablespoons Dijon mustard. 2 cups arugula leaves. 4 tablespoons olive oil.
Instructions: Warm the oven up to 190C 375F. Toast the bread for about 5 minutes, or until it turns a light golden color. Place the slices on a baking sheet. Add salt and pepper to the tomato slices. Set up a place to bread: In one shallow bowl, put the flour. In another bowl, whisk the eggs. Finally, put the breadcrumbs in the third bowl. Coat each tomato slice evenly by dipping it in flour, then egg, and finally breadcrumbs. Set a pan on medium heat and add the olive oil. Fry tomato slices in bread crumbs for about two to three minutes on each side, or until golden brown and crispy. Put paper towels down to dry. Put some mayonnaise and Dijon mustard on one side of each toasted bread slice. Put arugula leaves, fried tomato slices, and mozzarella cheese on top of each sandwich. After putting the sandwiches back together, bake them for another three to four minutes, or until the cheese melts. Take it out of the oven, cut it up if you want, and serve right away.
