The classic Caprese salad is made even better with Caprese Orzo Salad. Cherry tomatoes, mozzarella, basil, and orzo pasta are all mixed together in a balsamic vinaigrette dressing to make it taste fresh. You can eat this salad as a light and refreshing meal or as a side dish at a party.
Ingredients: 1 cup orzo pasta. 1 1/2 cups cherry tomatoes, halved. 1 1/2 cups fresh mozzarella balls. 1/2 cup fresh basil leaves, chopped. 3 tablespoons extra-virgin olive oil. 2 tablespoons balsamic vinegar. Salt and pepper to taste.
Instructions: Follow the directions on the box to cook orzo pasta until it is al dente. Take it out and let it cool down. Cook the orzo and put it in a large bowl. Add the cherry tomatoes, fresh mozzarella balls, and chopped basil. Put the olive oil and balsamic vinegar in a small bowl and mix them together with a whisk. Add pepper and salt to taste. Pour the dressing over the salad ingredients and toss them around gently to coat. Put it in the fridge for at least 30 minutes to let the flavors mix. Serve cold, and if you want, add more basil leaves to the top.
