This Tomato Basil Pasta is a simple but tasty dish that shows off how fresh ripe tomatoes and fragrant basil can be. Any day of the week, this dish is great because it combines the tastes of summer in a warm bowl of pasta.
Ingredients: 300g spaghetti. 4 large tomatoes, diced. 2 cloves garlic, minced. 1/4 cup fresh basil leaves, chopped. 1/4 cup olive oil. Salt and pepper to taste. Grated Parmesan cheese for serving.
Instructions: Cook spaghetti according to package instructions until al dente. Drain and set aside. In a large skillet, heat olive oil over medium heat. Add minced garlic and saut until fragrant, about 1-2 minutes. Add diced tomatoes to the skillet and cook until they start to break down and release their juices, about 5-7 minutes. Season the tomato mixture with salt and pepper to taste. Add the cooked spaghetti to the skillet and toss until well coated with the tomato mixture. Remove from heat and stir in chopped basil leaves. Serve hot, garnished with grated Parmesan cheese. Enjoy!
