Vegan Sponge Cake

So this isn't my blog, not my recipe, I only made the recipe. I had to use a 9in square baking pan, so cooking time was doubled.

BUT THIS IS GREAT. It came out of the oven puffy and beautiful.

I've made it before, it's very filling, I love it. But for whatever reason my cake never made it out well, so I started experimenting! I've also made "proper" tres leche with cow products- as good as it was on the tongue it felt like a heart-attack. Coconut milk doesn't feel quite so bad on the body!!

I found another sponge recipe & tres leche recipe, including making my own condensed milk... a lot fancier, maybe you'll be seeing that in the future!

This girl I went to elementary school with randomly invited me to pull up yesterday and proceeded to feed me chicken wings, burgers, shrimp, korean bbq and put me onto sake which we had at least 8-12 shots of. Ended the night with a huge slice of her home made tres leche cake and my ass almost cried. The asian girls in my city are truly gems fam. 🙏🏽

I was gonna go to the grocery store to get ingredients but it’s like a fucking monsoon outside so I just came straight home. But, I really wanna try my hand at making one.
