Examples on other shows is always hard for me for some reason but a tsundere uke just means the one who is being pursued in the relationship is also reluctant and tends to express their emotions as anger and rejection regardless of how they feel. It's a specific archetype that's fairly common.

Anyway, tsundere also means that they tend to hide their love and/or affection or caring. Uke is literally just the yaoi term for the one being pursued in the relationship. They tend to be reluctant to love, to not want to love, to repeatedly reject the seme aka the pursuer in the relationship.
There are genuinely tons of them in BL and yaoi, they're all over the place. Very, very common archetype. Cupid's Last Wish had an extreme version of this.
