Black Bean Mexican Pasta Salad I bought a bag of black (turtle) beans a while ago and had been meaning to make something with them. Threw this together today for lunch for the week. The beans were raw so had to be prepared. But if you can find canned black beans you could use those to save on time. The dressing I used is vegan and can be found in Woolworths. This recipe made approx 6-8 serves (halve the amount if you want less). It took a bit of time for me to make because of having to prepare the beans, but would only have taken about 15 mins to prepare and make if you use canned beans. INGREDIENTS: 2 cups black beans pre-prepared (or 2 cans drained and rinsed) Tsp salt 3/4 bag wholemeal pasta (or glutenfree if you prefer) 1 large can of corn kernels drained and rinsed 2 tomatoes diced 1 red capsicum diced 1 Spanish onion diced 1 small cucumber diced Juice of 1/2 lemon Pinch of salt 2 Tbsp fresh coriander chopped Lime and chilli dressing to serve Avocado to serve METHOD: If preparing your beans from raw they need to be soaked in water overnight (2 cups water to 1 cup beans). The next day drain and rinse beans and then add to a pot of boiling water with tsp salt and boil for approx 45 minutes or until soft. Drain and put to the side. Cook pasta. Drain. Add all ingredients except dressing and avocado to a big mixing bowl and combine.
