Sweet Potato & Carrot Tzimmes (Vegan Jewish Prosperity Side Dish)
Carrots are one of the most commonly used of symbolic foods in Eastern European meals. The Yiddish word for carrot also means to increase or multiply — a positive wish for prosperity and luck to bring to the table.
I have invented the BEST culturally inauthentic recipe for carrot tzimmes (for readers who don’t know what Im talking about: auspicious gold coins, traditional for Jewish New Year)
Large nonstick frying pan or wok
Big lump of salted butter
Five or six carrots cut into circles
Juice of a few oranges
Tablespoon or two of golden syrup/treacle/molasses
Tablespoon of ground ginger
Tablespoon of ground turmeric
Teaspoon of ground cardamom
Teaspoon of freshly ground pepper
Melt butter over low heat in saucepan, then add some of the orange juice and everything else. Cook over low heat till it dries out, stirring every five or ten minutes and scraping up any goo that sticks to the saucepan. When it dries out, add more orange juice and repeat until the carrots are mostly cooked (should take half an hour or so.) Good cold but better warm.
