Remember this wine from Friday? Well I got to taste some Monday. #sommlife #unicornwine #latergram (at High Street Wine Co.)
Domaine Cédric Bouchard. Not in my glass but I’ve at least seen a bottle and held it in my hand. #unicornwine #sommlife #flashcardwine (at High Street Wine Co.)
Sadly Jean-Louis lost a majority of his 2016 crop to frost and hail, making this Fleurie a unicorn wine. Absolutely stunning. It doesn't get much better than Dutraive... #wine #instawine #beaujolais #fleurie #gamay #delicious #unicornwine #iconic
The kind of wine you'd drink if you've received a signal about the impending end of the earth. Enjoying a special gift from Mallorca, Sibila 2012 (VdlT Mallorca) by Can Xanet made with the native varietal Gorgollassa. #mallorcawine #spanishwine #unicornwine (at Vineyards, Florida)

ANCESTRAL TIMELINE OF EVENTS
2007: Begin producing Traditional Method sparkling wines from Pinot Noir and Chardonnay vineyard. Sidenote: vintner drives past winery and shouts from his truck that we’re crazy to be making sparkling.
2009: Upon realizing that we’ve only made Traditional Method sparklers to date, we begin looking into other sparkling wine methods (heck, since we’re making only sparkling we may as well make all methods used for bubble production). Whitecap is born.
2010: July. Winery is finally open. Receive call from John Gay, former GM of Susur and Lee and current GM of Harbor 60 Steakhouse, and asks if we’ve ever tasted Bugey-Cerdon and if I’m (Vic) is in Toronto. When I reply yes, he asks if I have flutes. I reply, yes of course. (Sidenote: I refer to myself as the party paramedic as my wagon is always filled with sparking wine & flutes).
Meet in downtown Toronto, taste Bugey-Cerdon and while tasting John asks: “Do you think you can make this?”. I reply, dreamily looking off into the distance, “We have to”. Take sample to Jonas and we begin brainstorming.
August. Jonas locates Gamay Noir grapes and we decide to make enough wine that we can afford to pour down the drain, because let’s face it. It’s not like we can call the region of Bugey and ask how to make the stuff. We work on theory, start with the end in mind and white knuckle it until it is complete. Ancestral is born.
2011 September. Just before second vintage of Ancestral, begin receiving feedback that an unusual number of babies have been produced after drinking the Ancestral. The moniker babymaker is born (pun intended). Since its inception (more puns!) several more reports of babies being produced by the babymaker have come in. Further research shows evidence of all method ancestral wines causing the “baby” side effect. Konrad Ejbich features the 2011 Ancestral on CBC radio, David Lawrason reviews Ancestral in Ottawa Magazine and Beppi Crosariol writes an article on the Ancestral in the Globe and Mail. Wine perpetually sold out.
2013: Current release is available. Reported by trusted sources to be best effort ever.
