The beginning of a rustic pork stew... Got a 5lb bone-in pork sirloin, cut the meat off, cubed it up and seared that first. Removed the cubes (to be added later) but left the oil and rendered fat, then seared off the bones. Just reduced the heat and added the sweet onion and garlic to sweat down.
