Mermelada de cava, or Cava jam, is a delightful and unique jam made with sparkling wine. It has a sweet and slightly tangy flavor with the refreshing essence of lemon. This jam is perfect for special occasions or as a gourmet gift for friends and family.
Ingredients: 750ml of cava. 500g of sugar. 1 lemon, zest and juice.
Instructions: Transfer the cava into a big saucepan with a thick bottom. To the cava, add the sugar, lemon juice, and zest. Heat the mixture to medium-high, stirring constantly, and bring it to a boil. After it comes to a boil, lower the heat to a simmer and let it cook for 45 to 60 minutes, or until the jam thickens to the consistency you want. Stir from time to time. Pour the jam into sterilized jars and seal them tightly while the jam is still hot. When storing the jars in a cool, dark location, let them cool to room temperature. Savor your homemade Cava jam as a condiment for different dishes, on toast, or with cheese.
