Eggs in the basket (or whatever name you use for them...there are many) is an excellent brunch dish, but my previous attempt to make them traditionally (in a skillet) didn't quite work out. But what if I baked them? So I did! And as you can see, it worked out quite well—I erred on the side of caution and baked them for about 10 minutes, meaning the eggs were less runny than I prefer, but not to any severe degree. And the bread (Oroweat's Oatnut bread) tasted like cornbread. (It might've been the canola cooking spray I used to grease the tray.) I whipped up this dish the other night using some leftover zucchini and yellow squash, meatballs, pasta, pesto, and marinara. Since I got the zucchini and squash for a dinner at @coryleestevens' place, why not call it Pasta Cory? #pasta #spaghetti #universalnoiseoffeeding
