Hello and welcome to #KitchenWitchinWednesday 🍽
This week's dish is entirely vegan, and each ingredient has magical properties which will be listed at the end of this post!
For the veggie Israeli couscous; add olive oil to a sauce pan. Saute diced red onion, minced garlic and diced mushrooms until fragrant. Add the Israeli couscous and toast for a minute or two. Add twice the amount of veggie stock as couscous, cover and bring down to a low simmer. Once couscous is cooked through, tear up some fresh tarragon and toss that in there.
For the charred broccolini; add olive oil to a frying pan and cook broccolini on medium high until each side is charred. Sprinkle za'atar seasoning on top.
For the hummus; add a can of mostly drained chickpeas to a blender or food processor with tahini, so much garlic, a bit of olive oil and a pinch of salt. Blend until desired consistency. Make a dent in the middle of the hummus on the plate, fill with minced garlic and drizzle with olive oil. I like to call this a garlic volcano 🤗

✨garlic - this antibacterial, antifungal aphrodisiac is a traditional Hecate offering that promotes protection, confidence, longevity and clairvoyance. It links us with the underworld and can be used in recipes where information from the underworld is required. The ancient Greeks used to place cloves and bulbs of garlic atop piles of stones at crossroads as a gift and meal for Hecate.
✨chickpeas - full of fiber, b vitamins and zinc. chickpeas are associated with venus and are said to provoke menstruation
✨olive oil - associated with Athena, Apollo, Minerva and the sun. In greek mythology the olive tree is sacred. It was used to win over Athens in a contest with Poseidon by giving the people the most useful gift. Represents marriage, fertility, peace and protection.
✨tahini/sesame - useful in money and love work
✨mushrooms - used to boost the immune system
✨onion - an aphrodisiac that promotes clairvoyance, healing and divination. Onion can be used to overcome opposition and to manifest prophetic dreams. Onion is also an antiseptic that lowers blood pressure and helps with sexual potency in times of stress.
✨tarragon - commonly used in kitchen magic to help keep guests at ease. It is said to bring good luck and protection. Associated with Lilith.
✨lemon - used for longevity, purification, love and friendship. Thirst quenching; reduces appetite and sugar cravings; treats sore throat, colds, and fevers; Gout ; Neuralgia, arthritis, rheumatism; Good in the summer to relieve heat and Sunstroke (with salt)
